Yummy Dinner! Polenta with Sun-Dried Tomatoes and Goat Cheese


Please excuse the not so great picture of this yummy dinner. My nice expensive Canon Rebel seems to have lost its ability to hold a charge - so I was left with only my cell phone camera to document this dinner.

But believe me, it was yummy. I had purchased some of the pre-made polenta at Trader Joe's and really wanted to do something new with it. Since I had some Sun-Dried Tomato Pesto in the pantry and some goat cheese in the fridge -- I came up with this. Just ran to the store for some chard (my vegetable of choice right now) and ta-da!

All it took was boiling down the chard, slicing the polenta adding a dribble of the pesto and a slice or two of the cheese, and I put it in the oven for 20 mins @ 350 degrees.

It tasted great - and it's healthy and vegetarian!
